Step 1
Wash and cut the peppers, removing the core and seeds. Cut them into pieces.
Step 2
Wash and cut the zucchini into half-moons.
Step 3
Peel and cut the red onions into quarters. Break them into petals.
Step 4
In a bowl, combine the peppers, onion, zucchini, cherry tomatoes, half of the grated garlic, half of the smoked paprika, and a drizzle of olive oil. Season with salt and pepper.
Step 5
In a second bowl, mix the shrimp with the remaining smoked paprika and grated garlic, and a drizzle of olive oil. Season with salt and pepper.
Step 6
On a skewer*, add a shrimp, bell pepper, onion, zucchini, and cherry tomato. Repeat this process 2 to 3 times, depending on the length of your skewer. Repeat as many times as needed.
Step 7
Place the skewers in the air fryer basket with the rack. Cook them in the air fryer for 8 to 10 minutes at 200°C.
Step 8
Once the shrimp are golden brown and the vegetables are cooked, remove the skewers from the air fryer. Serve them on a plate with a green salad dressed to your liking. It's ready!
If using wooden skewers, soak them in water for 30 minutes before grilling (pan-frying or on the barbecue) to prevent them from burning.
