Ingredients

Utensil

Air fryer.

Recipe

Eggplant

Step 1

Wash & thinly slice the eggplants.

Zucchini

Step 2

Wash & thinly slice the zucchini.

Tomato

Step 3

Wash & cut the tomatoes into quarters.

Garlic

Step 4

Add the eggplant to the air fryer basket with the zucchini, tomatoes, grated garlic & a good drizzle of olive oil. Season with salt & pepper. Air fry for 20 min at 180°C.

Black olives (pitted)

Step 5

Meanwhile, cut the olives in half.

Pine nuts

Step 6

If needed, grill the pine nuts in a pan or in the air fryer until golden brown.

Step 7

Once the vegetables are cooked through, take the veggies out of the air fryer. Let them cool for 15 min.

Mozzarella (buffalo)

Step 8

Serve the roasted vegetables on a plate with the olives, mozzarella & pine nuts. Re-season to taste & enjoy !
