Ingredients

Air fryer and Blender.

Recipe

Sweet potato

Step 1

Wash & cut the sweet potatoes in half lengthwise.

Paprika

Step 2

Place the sweet potatoes in the air fryer basket with the rack. Add a drizzle of olive oil & half of the paprika. Air fry for 25-30 min at 200°F, flipping halfway through.

Avocado
Whole milk yogurt (plain)
Lime

Step 3

In the meantime, prepare the avocado sauce. In the bowl of a blender, add : the avocado, yogurt, lime juice & lime zest. Season with salt & pepper. Blend until smooth.

Chickpeas (canned)

Step 4

After 25 min, remove the air fryer basket & add the chickpeas with the sweet potatoes. Add a drizzle of olive oil & the remaining paprika. Continue cooking in the air fryer for 15 min at 200°C.

Step 5

Once the sweet potatoes are cooked & the chickpeas are crispy, remove them from the air fryer.

Step 6

Serve the sweet potatoes on a plate with the avocado sauce & top with the chickpeas. Re-season to taste & enjoy!
