Sweet potato

Step 1

Wash then prick the sweet potatoes with a fork. Place them in the air fryer basket with the rack. Drizzle with olive oil & air fry for 30-35 min at 200°C, flipping them halfway through.

Step 2

After 35 min, remove the sweet potatoes from the air fryer. Cut them in half lengthwise.

Crème fraîche
Roquefort Cheese
Walnuts

Step 3

Add the crème fraîche, blue cheese & crushed walnuts. Season with salt & pepper & continue cooking in the air fryer for 10 min at 200°C.

Arugula

Step 4

Once the cheese is melted & golden brown, remove the sweet potatoes from the air fryer. Serve the arugula on a plate with the roasted sweet potatoes. Re-season to taste & enjoy!
