Step 1
Wash and cut the eggplant into cubes.
Step 2
Place the eggplants in the air fryer basket with the rack attached. Add a generous drizzle of olive oil and season with salt and pepper. Mix well, then cook in the air fryer for 10 to 12 minutes at 200°C.
Step 3
Meanwhile, in a saucepan of boiling salted water, cook the pasta according to the package instructions. At the end of cooking, set aside a small ladle of cooking water. Drain the pasta.
Step 4
After 12 minutes, remove the eggplant from the air fryer. Stir, then continue cooking in the air fryer for 5 minutes at 200°C. Once golden and tender, remove the eggplant from the air fryer.
Step 5
Meanwhile, heat a frying pan over medium heat. Add the crushed tomatoes. Season with salt and pepper, and add the grated garlic. Cook for 2 to 3 minutes.
Step 6
Add the cooked eggplant to the pan with the tomato sauce. Stir and continue cooking for 2 more minutes.
Step 7
Add the drained pasta and mix well. If necessary, add a splash of the reserved cooking water. Mix again.
Step 8
Serve the pasta alla Norma on a plate with the ricotta on top and a few fresh basil leaves, if you have any. Re-season to taste. It's ready!
