Step 1

Peel & cut the carrots in half or in quarters lengthwise.

Cumin (ground)
Honey

Step 2

Add the carrots to the air fryer basket with the rack. Season with salt, pepper, ground cumin, a drizzle of honey & olive oil. Air fry for 20 min at 180°C, flipping regularly.

Mixed grains

Step 3

Meanwhile, in a pot of salted boiling water, cook the mixed grains according to package instructions. Once cooked through, drain them.

Feta cheese (block)
Mint (fresh)

Step 4

Serve the mixed grains with the honey-roasted carrots. Top with crumbled feta & fresh mint, if you have some. Re-season to taste & enjoy!
