Ingredients

Step 1
Wash & cut the cucumber into cubes.

Step 2
Wash & halve the cherry tomatoes.

Step 3
Drain the feta & pat it dry with a paper towel. Slice it into small cubes.

Step 4
In a shallow dish, crack the eggs & whisk them with a fork. Coat the feta cubes in it.

Step 5
In a second shallow dish, add the breadcrumbs. Coat the feta cubes in it.
Step 6
Add the feta to the air fryer basket with the rack. Add a drizzle of olive oil & air fry for 10 min at 190°C, flipping halfway through.

Step 7
Meanwhile, prepare the vinaigrette. In a small bowl, combine : lemon juice & 1 teaspoon of olive oil per serving. Season with salt & pepper.

Step 8
Heat the quinoa according to package instructions.
Step 9
Serve the quinoa with the diced cucumbers and tomatoes. Add the crispy feta and drizzle all over with the vinaigrette. Garnish with some fresh basil, if you have some & enjoy!
