Recipe

Step 1
Wash & slice the broccoli into florets. Cut them in halves or quarters, if needed.
Step 2
In a pot of salted boiling water, add the broccoli. Cook for 5-6 min, then drain. Set aside & keep warm.

Step 3
Meanwhile, place the chicken on plastic wrap & cover it, then flatten it using the bottom of a pot or a rolling pin.

Step 4
In a shallow dish, add the flour with a pinch of salt & pepper. Coat the chicken on both sides.

Step 5
In a second shallow dish, add the egg. Whisk it with a fork, then dip the chicken on both sides.

Step 6
In a third shallow dish, add the breadcrumbs & half of the parmesan, then coat the chicken on both sides. For a thicker crust, coat the cutlet a second time in the beaten egg & then in the breadcrumbs.
Step 7
Place the breaded chicken in the air fryer basket with the rack. Add a drizzle of olive oil & air fry for 15-20 min at 180°C, flipping them halfway through.
Step 8
Once golden & crispy, remove the chicken from the air fryer. Slice into strips, if you like.
Step 9
Serve the crispy chicken on a plate with the broccoli. Top with the remaining parmesan & re-season to taste. Enjoy!
