Air Fryer Chicken Skewers with Apricots

Step 1
Wash then cut the apricots in half.

Step 2
Cut the chicken into cubes.


Step 3
In a bowl, add: the chicken, apricots, half of the honey & rosemary & a small drizzle of olive oil. Season with salt & pepper. Mix to evenly coat.
Step 4
On a skewer*, add a piece of chicken followed by a piece of apricot. Repeat this process 2 to 3 times, depending on the length of your skewer. Repeat as many times as needed. *Check out our tips for this step
Step 5
Place the skewers in the air fryer basket with the rack. Cook them in the air fryer for 10 to 12 min at 200°C.
Step 6
Meanwhile, prepare the salad dressing. In a bowl, combine: the remaining honey & rosemary, the vinegar of your choice & a tablespoon of olive oil per serving. Season with salt & pepper.


Step 7
Once the chicken is cooked & golden brown, take the skewers out of the air fryer. Serve the salad with the skewers. Season with the salad dressing & top with the crushed almonds, if you have any. Enjoy!

If you're using wooden skewers, soak them in water for 30 min before grilling to prevent burning.
