Air fryer
Step 1
Preheat the air fryer to 220°C (oven at 220°C). Clean & slice the potatoes in halves or quarters, depending on their size.
Step 2
Arrange the chicken in the air fryer basket with the potatoes. Season with a drizzle of olive oil, 'herbes de Provence', salt & pepper. Toss everything together & air fry for 20-25 min at 220°C (25-30 min in the oven at 220°C).
Step 3
Add the tomatoes to the air fryer & cook for an additional 5 min in the air fryer at 220°C (7-10 min in the oven at 220°C), until the chicken & potatoes are fully cooked.
Step 4
Meanwhile, if you have some, wash & finely mince the fresh basil.
Step 5
Serve the chicken & potatoes in a plate with the roasted tomatoes & mini mozzarella balls. Top with balsamic glaze & freshly minced basil. Re-season to taste & enjoy !
