Step 1
Wash and cut the peppers in half, removing the core and seeds. Cut them into thin strips.

Peel and cut the onions into thin strips.

In the air fryer basket with the rack, add the beef, bell peppers, red onions, and Mexican spice mix. Season with salt and pepper, and add a drizzle of olive oil. Mix together, then cook everything in the air fryer for 10 to 12 minutes at 200°C, stirring halfway through.
Step 5
Once the steak and vegetables are cooked, remove them from the air fryer. Warm the tortillas, then top them with the vegetable/steak mixture. Add the sour cream, a few cilantro leaves, and a squeeze of lime juice, if you have some. Re-season to taste; it's ready!
