Zucchini Soup with Cream Cheese

Kiri spreadable cream cheese

- Step 1
Peel & slice the onions into quarters. - Step 2
Wash & dice the zucchini. - Step 3
In the Thermomix bowl, add the onions & peeled garlic. Mix for 5 sec / speed 5. Clean the sides using a spatula. - Step 4
Add a drizzle of olive oil & the zucchini. Cook for 3 min / 120°C / reverse / speed 1. - Step 5
Meanwhile, prepare the veggie stock. Dissolve the stock cube in 125ml of warm water per serving. - Step 6
Add the veggie stock, stir & cook for 20 min / 100°C / reverse / speed 'Simmering'. - Step 7
Once the zucchini is coked & tender, add the kiri cheese. Add the cap on the top of the Thermix bowl & blend for 30 sec / speed 10. If needed, add water & blend. - Step 8
Serve the zucchini soup with cream cheese in a bowl. Re-season to taste & enjoy !
