- Step 1
Put the peeled shallots in the Thermomix, mix for 5 seconds/speed 5. Scrape the sides with a spatula. Add a bit of olive oil and cook for 3 minutes / Varoma / reverse mode / speed 1. - Step 2
Add the rice, the wine & cook for 6 minutes / 120°C / reverse mode / speed 1. - Step 3
Add the vegetable cube stock, the sliced zucchini and 150g water per person. Cook for another 20 minutes / 100°C / reverse mode / speed 1. - Step 4
Once cooked through, add the parmesan, salt & pepper, (optional: add a bit of cream), mix for 30 seconds / reverse mode / speed 1. - Step 5
Serve the risotto. Add a bit of peps by topping it all with some lemon zest & pine nuts or shaved almonds if you have any.* Enjoy ! *Check out our tips for this step
