  • Step 1
    Optional: Toast hazelnuts in a pan or in the oven until they are lightly golden.
  • Step 2
    Wash the zucchini and cut it lengthwise in thin, long ribbons using a vegetable peeler. As soon as you see the seeds, rotate and continue peeling on all sides, avoiding the seeds. (Tip: save the middle to chop and cook with pasta or for another meal!)
  • Step 3
    In a large bowl, toss the zucchini ribbons, arugula, chopped burrata and chopped hazelnuts.
  • Step 4
    Add a splash of olive oil, lemon juice, lemon zest, salt and pepper. Toss to combine and enjoy!
