  • Step 1
    Preheat the oven to 180°C. Wash & dice the zucchini.
  • Step 2
    Prepare the crumble. In a large bowl, add : the flour, grated parmesan, salt, pepper & diced softened butter. Bring the mixture together using your fingers, until you begin forming crumbs that hold together when pinched.
  • Step 3
    Butter an oven-proof dish & add the zucchini.
  • Step 4
    Add the pesto & stir to combine. Season with salt & pepper & add the crumbled goat's cheese on top. Top with the crumble & bake for 40 min at 180°C.
  • Step 5
    Once golden on top & cooked through, remove the crumble from the oven & serve with a side of green salad. Enjoy !
