Peas (frozen)
1 handful
Arugula
50 g
Feta cheese (block)

Lemon

Cilantro (fresh)

- Step 1
In a shallow dish, add the frozen peas. Pour boiling water over them to cover & set aside for 3-4 min before draining. - Step 2
Wash & slice the zucchini into thin strips, using a peeler. - Step 3
Wash & finely mince the cilantro. - Step 4
Prepare the dressing. In a bowl, combine : a tablespoon of olive oil per person, cilantro & lemon zest & juice. Season to taste. - Step 5
Serve the arugula, zucchini, peas & crumbled feta. Pour the dressing over & top with cilantro leaves, if you have some left. Enjoy !
