- Step 1
Wash the zucchinis and cut them into very thin slices (use a mandolin if you have one). You can also use a veggie peeler for zucchini ribbons. - Step 2
Arrange the zucchini on a flat layer on a large plate, add the lemon zest and lemon juice, sprinkle parmesan shavings, salt & pepper to taste, and a drizzle of olive oil. - Step 3
Option: If you have some fresh basil leaves, feel free to add them! - Step 4
Sprinkle with pine nuts and enjoy! (If you have extra time, roast the pine nuts in a hot pan for 2 minutes).
