  • Step 1
    Wash & very thinly slice the zucchini using a sharp knife or a mandolin - you can also slice them into thin strips using a peeler.
  • Step 2
    Prepare the marinade. In a bowl, combine : the lemon juice & zest & 1 teaspoon of olive oil per person. Season with salt & pepper.
  • Step 3
    In a large plate or serving platter, arrange the zucchini rounds in a spiral pattern. Pour le marinade over & set aside in the fridge for 10-15 min.
  • Step 4
    Meanwhile, toast the pine nuts in a dry hot pan for a couple of minutes, until lightly golden. Set aside.
  • Step 5
    Remove the zucchini for the fridge & top with parmesan shavings, toasted pine nuts & fresh basil, if you have some. Enjoy !
