Zucchini and pea curry

Rice noodles

Zucchini
70 g
Peas (frozen)
50 ml
Coconut milk
1 pinch
Curry powder
1/2 clove
Garlic

- Step 1
Wash the zucchini. Slice them in half lengthwise & then into half moons. - Step 2
Heat a drizzle of olive oil in a frying pan over high heat. Add the zucchini, curry and garlic. Sauté for 3 minutes, stirring occasionally. Optional: add herbes de Provence or thyme. - Step 3
Add in the peas & coconut milk. Season with salt & pepper and leave to simmer on medium heat for 5 minutes. - Step 4
In the meantime, in a pot of salted boiling water, cook the rice noodles according to package instructions. Once cooked through, drain the noodles. - Step 5
Add the noodles to the pan with the vegetables and stir to combine. Season according to taste & enjoy !
