Black olives (pitted)

- Step 1
Wash and chop the zucchini into 1/2 inch cubes. Rinse and strain the chickpeas. - Step 2
Finely chop the herbs and shallots (or red onions). Roughly chop the olives. - Step 3
Add the lemon juice, 1 tablespoon of olive oil per person, salt and pepper in a large bowl. Mix. Add the zucchini, chickpeas, herbs, olives, shallots (or onions), and lemon zest. Mix well and enjoy! - Step 4
Optional: for the non vegans, try adding crumbled feta or goat cheese.
