  • Step 1
    Preheat the oven to 220°C. In a large bowl, combine yogurt, curry powder, lemon juice, salt & pepper.* Add a generous drizzle of olive oil then mix it all together. Set 1 tbsp of yogurt sauce aside. *Check out our tips for this step
  • Step 2
    Add the chicken. Toss to coat well. Cover the bowl & refrigerate for a minimum of 15 min.
  • Step 3
    Meanwhile, wash & slice the cauliflower into bite-sized florets.
  • Step 4
    Arrange the cauliflower on a sheet tray lined with parchment paper. Season with a drizzle of olive oil, salt & pepper. Toss well to evenly coat.
  • Step 5
    Remove the chicken from the fridge & arrange it on the sheet tray beside the cauliflower. Roast in the oven for 25-30 min at 220°C.
  • Step 6
    Meanwhile, prepare the rice according to package instructions.
  • Step 7
    Remove the chicken & cauliflower from the oven. Serve them with the rice & a side of yogurt sauce. Enjoy !
