Yogurt Curry Chicken with Cauliflower & Rice

Greek Yogurt (plain)

Curry powder

Cauliflower (fresh)

White rice (long grain, cooked)

- Step 1
Preheat the oven to 220°C. In a large bowl, combine yogurt, curry powder, lemon juice, salt & pepper.* Add a generous drizzle of olive oil then mix it all together. Set 1 tbsp of yogurt sauce aside. *Check out our tips for this step - Step 2
Add the chicken. Toss to coat well. Cover the bowl & refrigerate for a minimum of 15 min. - Step 3
Meanwhile, wash & slice the cauliflower into bite-sized florets. - Step 4
Arrange the cauliflower on a sheet tray lined with parchment paper. Season with a drizzle of olive oil, salt & pepper. Toss well to evenly coat. - Step 5
Remove the chicken from the fridge & arrange it on the sheet tray beside the cauliflower. Roast in the oven for 25-30 min at 220°C. - Step 6
Meanwhile, prepare the rice according to package instructions. - Step 7
Remove the chicken & cauliflower from the oven. Serve them with the rice & a side of yogurt sauce. Enjoy !
