Cook the noodles according to the instructions on the package. - Step 2
Thinly slice the mushrooms. - Step 3
Heat a large skillet or frying pan to medium-high heat and add a drizzle of olive oil. Add the mushrooms and string beans. - Step 4
Add the minced garlic and mix. - Step 5
Lower the heat to medium, cover and let cook for 10 minutes. - Step 6
In the meantime, whisk the eggs in a bowl. - Step 7
Move the vegetables to one side of the pan and pour the scrambled eggs into the other side. Let cook for 2 minutes, while breaking the eggs up with a spatula or wooden spoon. - Step 8
Add the noodles and soy sauce. Mix to combine and cook for 2 more minutes on high heat. - Step 9
Serve hot and enjoy! Optional: sprinkle with fresh cilantro
