  • Step 1
    Wash the apples and endives.
  • Step 2
    Chop the endives in half lengthways, then in sections.
  • Step 3
    Finely slice the apples, removing the skin if you prefer.
  • Step 4
    Make the dressing by mixing 1 teaspoon of vinegar with 1 tablespoon of olive oil (per person). Season with salt & pepper.
  • Step 5
    In a salad bowl, add the endives, salad, apples.
  • Step 6
    Add the crumbled roquefort (optional: add chopped chives) and the dressing. Mix well. Enjoy!
