- Step 1
Wash the peppers and cut them into thin strips. - Step 2
Add the peppers and sautée for 5 minutes. - Step 3
Add the chopped vegetables and corn and cook for 5 more minutes. Add salt and pepper to taste. - Step 4
Reheat the tortillas in the microwave or in a pan and add a large spoonful of the sautéed mixture to each one. - Step 5
Add the yogurt and chopped cilantro. If you like, add lemon zest, salt, pepper and a touch of olive oil. It’s ready to eat!
