Red onion

- Step 1
Finely chop the red onion. - Step 2
Cut the avocado in half, remove the pit and scoop out the flesh into a bowl. - Step 3
Mash the avocado with a fork and season with salt & pepper. Optional: add the juice of 1/2 a lemon. - Step 4
Spread the avocado and crème fraîche onto the tortilla and sprinkle with the cheese and red onions. Fold in half. - Step 5
Add some red onions and cheddar. Then close the quasadilla. - Step 6
Cook the quesadillas for 2 minutes on each side, until the cheddar starts to melt. - Step 7
Cut into 3-4 pieces. - Step 8
Serve with salsa and a few drops of Tabasco sauce. - Step 9
