Veggie & Chicken Stir Fry with Peanut Sauce

Carrots (fresh)

Zucchini
1/2 clove
Garlic

Sweet soy sauce

White rice (long grain)

- Step 1
Cook the rice according to package directions. Drain it at the end of cooking. Reserve. - Step 2
Cut zucchini and carrot slices using a vegetable peeler. - Step 3
Cut the chicken into slices. Reserve. - Step 4
In a large skillet, heat a drizzle of olive oil. Add the carrots and zucchini. Add salt and pepper and brown them for 5-6 minutes. Remove the vegetables from the pan. - Step 5
In the same pan, add a drizzle of olive oil and fry the chicken for 5-6 minutes, stirring regularly, until golden brown. - Step 6
Meanwhile, prepare the peanut sauce. In a bowl, mix: peanut butter, soy sauce and grated garlic. Add a splash of water, little by little to adjust the consistency of the sauce. - Step 7
Add the vegetables set aside to the pan with the chicken, then pour in the peanut sauce. Mix everything over low heat for 3 minutes. - Step 8
On a plate, add the rice and the fried vegetables and chicken. Sprinkle with sesame seeds, if you have them. It's ready !
