  • Step 1
    Cook the rice according to package directions. Drain it at the end of cooking. Reserve.
  • Step 2
    Cut zucchini and carrot slices using a vegetable peeler.
  • Step 3
    Cut the chicken into slices. Reserve.
  • Step 4
    In a large skillet, heat a drizzle of olive oil. Add the carrots and zucchini. Add salt and pepper and brown them for 5-6 minutes. Remove the vegetables from the pan.

    In the same pan, add a drizzle of olive oil and fry the chicken for 5-6 minutes, stirring regularly, until golden brown.

    Meanwhile, prepare the peanut sauce. In a bowl, mix: peanut butter, soy sauce and grated garlic. Add a splash of water, little by little to adjust the consistency of the sauce.

    Add the vegetables set aside to the pan with the chicken, then pour in the peanut sauce. Mix everything over low heat for 3 minutes.
  • Step 8
    On a plate, add the rice and the fried vegetables and chicken. Sprinkle with sesame seeds, if you have them. It's ready !
