  • Step 1
    Heat a drizzle of olive oil in a skillet over high heat. Add the gnocchi and cook for 2 minutes, stirring occasionally. Cover and continue cooking for 3 minutes over low heat.

    Meanwhile, drain and cut the sun-dried tomatoes into thin strips.
  • Step 3
    Check the gnocchi for doneness. Once golden brown, set them aside.

    In the same pan, heat a drizzle of olive oil over medium heat. Add the grated garlic and sauté for 30 seconds, stirring.

    Add the sun-dried tomatoes, single cream, and grated Parmesan cheese. Season with pepper and cook for 2 to 3 minutes, stirring.

    Add the herbes de Provence and spinach. Mix well and continue cooking until the spinach has wilted.

    Add the gnocchi to the pan and stir for another minute.

    Serve the Tuscan gnocchi on a plate. Sprinkle with grated Parmesan cheese, if you have any leftover, and season to taste. It's ready!
