Heat a drizzle of olive oil in a skillet over high heat. Add the gnocchi and cook for 2 minutes, stirring occasionally. Cover and continue cooking for 3 minutes over low heat. - Step 2
Meanwhile, drain and cut the sun-dried tomatoes into thin strips. - Step 3
Check the gnocchi for doneness. Once golden brown, set them aside. - Step 4
In the same pan, heat a drizzle of olive oil over medium heat. Add the grated garlic and sauté for 30 seconds, stirring. - Step 5
Add the sun-dried tomatoes, single cream, and grated Parmesan cheese. Season with pepper and cook for 2 to 3 minutes, stirring. - Step 6
Add the herbes de Provence and spinach. Mix well and continue cooking until the spinach has wilted. - Step 7
Add the gnocchi to the pan and stir for another minute. - Step 8
Serve the Tuscan gnocchi on a plate. Sprinkle with grated Parmesan cheese, if you have any leftover, and season to taste. It's ready!
