- Step 1
Wash, then slice the zucchini into half rounds. - Step 2
Wash, then slice the mushrooms. - Step 3
Heat a drizzle of olive oil in a pan, over medium heat. Add the zucchini & mushrooms. Season with salt, pepper & some 'herbes de Provence'. Cook for 4-5 min while stirring. - Step 4
Meanwhile, slice the mozzarella. - Step 5
Preheat the oven to 180°C. In a baking dish (we used a 32 x 20 cm dish here), add a first layer of tomato sauce, followed by a layer of raw lasagna sheets, the sautéed veggies & mozzarella slices. Repeat for another 2 layers with the remaining ingredients. - Step 6
Top with a layer of tomato sauce & mozzarella slices. Make sure the noodles are covered with the tomato sauce. Bake for 30-35 min at 180°C. - Step 7
Once the cheese has melted & the top is golden brown, remove the dish from the oven. Serve the lasagna with a side of green salad & enjoy !
