- Step 1
Preheat the oven to 180°C. Wash the oranges & cut them into thin, round slices. Leave one orange to the side without cutting it. - Step 2
In a large pan, add the oranges & half the sugar. - Step 3
Pour 1 cup of water in with the oranges & bring to a boil. Lower heat to medium & cook for 15 minutes. - Step 4
While the oranges are cooking, whisk the eggs, the remaining sugar*, & a pinch of sea salt in a bowl. Mix well until soft peaks form. *Check out our tips for this recipe - Step 5
Little by little, add the olive oil & continue whisking until well combined. - Step 6
Add the baking powder & zest from one orange (the one you left aside earlier!). Cut the orange in half & squeeze the juice into the batter. - Step 7
Add the flour & carefully mix using a spatula. The batter should be light and airy. - Step 8
Remove the orange slices from the heat & set aside. - Step 9
Add a piece of parchment paper to the bottom of your cake pan (we used a 23 cm diameter dish here) & coat with a drizzle of olive oil using your fingers. - Step 10
Add the orange slices in a round pattern at the bottom of the baking pan. Keep the syrup leftover. - Step 11
Delicately cover the orange slices with the batter. Bake for 35 minutes at 180°C. - Step 12
Remove the cake from the oven & let it cool for a few minutes. Slide a knife around the cake to make sure it doesn't stick. - Step 13
Top the baking pan with a large plate, hold it in place & quickly flip. Carefully remove the parchment paper. Pour the remaining syrup over the cake. - Step 14

Recipe tip
If you wish to reduce sugar quantities, you can remove up to ⅓ of the sugar in this recipe without altering flavor.
