- Step 1
In a pot of salted boiling water, cook the mixed grains according to package instructions. Once cooked through, drain & set aside. - Step 2
Meanwhile, drain, then rinse the beans. - Step 3
Slice the avocado in half. Remove the skin & the pit. Cut the avocado into cubes. - Step 4
Prepare the salad dressing. In a bowl, combine : a tablespoon of olive oil per person & the lemon zest & juice. Season with salt & pepper & mix well. - Step 5
In a salad bow, combine : the mixed grain, beans, drained tuna, arugula, & avocado. Pour the salad dressing over & stir to combine. - Step 6
Serve the tuna & bean salad on a plate. Re-season to taste & enjoy !
