  • Step 1
    Peel and finely chop the onions.
  • Step 2
    Heat a dab of butter or a drizzle of olive oil in a pot over medium-high heat and add the onions. Add the grated or minced garlic and sauté for 2 minutes.

    Add the tomatoes, the vegetable stock cube(s), and 200 ml of water per portion. Cover and simmer for 10 minutes over medium heat.

    Meanwhile, butter two slices of bread per portion.
  • Step 5
    Fill the sandwiches with the shredded mozzarella and cheddar.

    In a pan over medium-high heat, grill the sandwiches for 3 minutes on each side, or until the cheese is melted and the bread is golden brown. Keep warm while you finish making the soup.

    After 10 minutes of simmering, season the soup with salt and pepper and puree using an immersion blender.
  • Step 8
    Serve the soup in bowls. Optional: Top each bowl with a tablespoon of crème fraîche and some fresh basil leaves. Serve with the grilled cheese sandwiches, for dipping in the soup.
