Tomato Soup with Grilled Cheese Sandwiches

Tomatoes (canned, peeled)

White bread (sliced)

Peel and finely chop the onions. - Step 2
Heat a dab of butter or a drizzle of olive oil in a pot over medium-high heat and add the onions. Add the grated or minced garlic and sauté for 2 minutes. - Step 3
Add the tomatoes, the vegetable stock cube(s), and 200 ml of water per portion. Cover and simmer for 10 minutes over medium heat. - Step 4
Meanwhile, butter two slices of bread per portion. - Step 5
Fill the sandwiches with the shredded mozzarella and cheddar. - Step 6
In a pan over medium-high heat, grill the sandwiches for 3 minutes on each side, or until the cheese is melted and the bread is golden brown. Keep warm while you finish making the soup. - Step 7
After 10 minutes of simmering, season the soup with salt and pepper and puree using an immersion blender. - Step 8
Serve the soup in bowls. Optional: Top each bowl with a tablespoon of crème fraîche and some fresh basil leaves. Serve with the grilled cheese sandwiches, for dipping in the soup.
