White bread (sliced)
80 g
Mozzarella (fresh)

Tomato
2 handfuls
Arugula
1 tbsp
Pesto

Wash and slice the tomato. - Step 2
Slice the mozzarella. - Step 3
Spread the pesto on the slices of bread. - Step 4
Add the slices of tomato and mozzarella on the slices of bread. Optional: Add some fresh basil and pine nuts. Season with pepper. - Step 5
Place some arugula on top and close the grilled cheese. - Step 6
Heat a drizzle of olive oil or a dab of butter in a pan on medium heat. Cook the sandwiches for a couple of minutes on each side, or until golden. - Step 7
Remove from the heat, cover the pan and let the cheese melt for 1-2 minutes. - Step 8
Cut the sandwiches. - Step 9
Serve hot and enjoy!
