Spiced couscous

Tomato paste
60 g
Chickpeas (canned)
1/4 tsp
Ras el hanout
15 g
Raisins

- Step 1
Boil a pot of water. In a bowl, mix : the couscous with salt, pepper, a drizzle of olive oil & the tomato purée. Add the raisins & pour the same volume of couscous in boiling water. Cover & leave to soak for 5 min. Fluff the couscous with a fork & set aside. - Step 2
Meanwhile, slice the chicken into bite-sized pieces. - Step 3
Heat a drizzle of olive oil in a pan over medium heat. Add the chicken & chickpeas. Season with salt, pepper & ras el hanout spices. Sauté for 5-6 min, until the chicken is golden brown. - Step 4
In a salad bowl or plate, serve the couscous with the chicken, chickpeas & re-hydrated raisins. Stir to combine & top with fresh parsley, if you have some. Enjoy !
