- Step 1
 Slice off the ends of the grapefruit, then slice off the peel all around, taking care to remove the bitter white pith. Cut out each section with a knife, removing the seeds, if necessary.
- Step 2
 Cut the orange into supremes in the same way.
- Step 3
 Wash and cut the tomatoes into quarters.
- Step 4
 Peel the avocado, remove the pit and cut it into cubes.
- Step 5
 To make the vinaigrette: Mix 1 tablespoon of olive oil per portion with the remaining juice of the grapefruit and orange, the apple cider vinegar, and salt and pepper to taste.
- Step 6
 In a large salad bowl, mix the tomatoes, avocado, orange, grapefruit, vinaigrette, minced shallots, and salt and pepper to taste. It's ready!
