- Step 1
Add the tomatoes to a pot of boiling water & cook for 30 sec. Take them out & remove the skin using a knife. Cut them into quarters & remove the seeds. - Step 2
Wash then cut the strawberries into pieces. - Step 3
Peel, then cut the red onions into pieces. - Step 4
To a blender, add : the tomatoes, red onions, croutons, basil, if you have some & optionally some fresh garlic. Season with a drizzle of olive oil, salt & pepper. Mix until smooth. - Step 5
Serve the tomato & strawberry gazpacho with the burrata. Top with fresh basil leaves & re-season to taste. Enjoy !
