Heat a drizzle of olive oil in a pan sauté the tomatoes for 5 minutes over medium heat. - Step 2
Meanwhile, beat the eggs in a bowl with salt and pepper. - Step 3
When the tomatoes are done, remove them from the pan and set aside. - Step 4
Add a drizzle of olive oil to the pan and pour in the eggs. Cook over medium heat 1–2 minutes. - Step 5
Add the cream cheese (in small pieces) and the tomatoes on top of the omelette. - Step 6
Serve with a green salad—it's ready!
