- Step 1
Preheat the oven to 180°C. Line a sheet tray with parchment paper. Add the walnuts & pecans and toast in the oven for 5-6 min. - Step 2
Meanwhile, in a large bowl, add 3 tbsp of powdered sugar (for 12 cookies), softened butter & vanilla extract. Use an electric hand mixer to beat it all together, until creamy. - Step 3
Remove the nuts from the oven once toasted. Transfer to a cutting board & finely chop. - Step 4
In a large bowl, add the flour, the chopped nuts & a pinch of salt. Mix to combine. - Step 5
Add the flour mixture in 2 batches. Mix until everything is combined. You may need to use your hands to bring it all together. - Step 6
Use your hands or a cookie scooper to form 2-3 cm balls. Place each cookie on the sheet tray lined with parchment paper. Bake the cookies in the oven at 180°C for about 8-12 min, or until the bottoms of the cookies are golden. - Step 7
While the cookies bake, fill a mixing bowl with the remaining powdered sugar. - Step 8
Remove the cookies from the oven & cool for several minutes before tossing in powdered sugar. Serve & enjoy !
