Wash and slice the mushrooms. - Step 2
Heat a drizzle of olive oil in a saucepan over medium heat. Add the mushrooms, garlic, and grated ginger. Season with salt and pepper, and cook for 5 to 6 minutes, until golden brown. - Step 3
Then add 200 ml of hot water per person and the chicken. Cover and simmer for 15 to 20 minutes over low heat. - Step 4
Once the chicken is cooked, remove it from the pan and shred it. - Step 5
Add the peanut butter, noodles, and seasoning packet, if using, and stir again. Continue cooking for 2 to 3 minutes over medium heat. - Step 6
Once the noodles are cooked, add the chicken and coconut milk. Season to taste. - Step 7
Serve the chicken and mushroom noodles in a bowl. Add the broth and garnish with chopped spring onions, chopped peanuts, and a drizzle of coconut milk, if you have any leftover. Enjoy!
