  • Step 1
    Wash and slice the mushrooms.
  • Step 2
    Heat a drizzle of olive oil in a saucepan over medium heat. Add the mushrooms, garlic, and grated ginger. Season with salt and pepper, and cook for 5 to 6 minutes, until golden brown.

    Then add 200 ml of hot water per person and the chicken. Cover and simmer for 15 to 20 minutes over low heat.

    Once the chicken is cooked, remove it from the pan and shred it.

    Add the peanut butter, noodles, and seasoning packet, if using, and stir again. Continue cooking for 2 to 3 minutes over medium heat.

    Once the noodles are cooked, add the chicken and coconut milk. Season to taste.

    Serve the chicken and mushroom noodles in a bowl. Add the broth and garnish with chopped spring onions, chopped peanuts, and a drizzle of coconut milk, if you have any leftover. Enjoy!
