Chicken breast

Vermicelli (rice noodles)

1/2 tsp
Curry paste (green)

50 ml
Coconut milk

1 tbsp
Sweet soy sauce

1/4 clove
Garlic

In a food processor, pulse the chicken to roughly grind it. - Step 2
Chop the garlic. - Step 3
Then, mix it in a bowl with finely chopped garlic, salt, and pepper. - Step 4
Roll the mixture into 1-1.5 inch balls. (Tip: Put a bit of oil on your hands to keep it from sticking to you.) - Step 5
Now, drizzle some olive oil in a frying pan and fry the meatballs over high heat for 5 minutes, turning them over on all 4 sides so they cook evenly. - Step 6
Once the meatballs are golden, add the soy sauce to the pan and sauté for another minute. - Step 7
Then, add the coconut milk and curry, and mix together. Cover and simmer over low heat for 2 minutes. - Step 8
Meanwhile, place the vermicelli noodles in a bowl. Cover them in boiling water and leave to soak for 5 minutes. Then drain. - Step 9
Serve the noodles with the meatballs and sauce on top. Optional: Top with a bit of cilantro and a wedge of lemon if you have any. And enjoy!
