    In a food processor, pulse the chicken to roughly grind it.
  • Step 2
    Chop the garlic.
  • Step 3
    Then, mix it in a bowl with finely chopped garlic, salt, and pepper.
  • Step 4
    Roll the mixture into 1-1.5 inch balls. (Tip: Put a bit of oil on your hands to keep it from sticking to you.)

    Now, drizzle some olive oil in a frying pan and fry the meatballs over high heat for 5 minutes, turning them over on all 4 sides so they cook evenly.

    Once the meatballs are golden, add the soy sauce to the pan and sauté for another minute.

    Then, add the coconut milk and curry, and mix together. Cover and simmer over low heat for 2 minutes.

    Meanwhile, place the vermicelli noodles in a bowl. Cover them in boiling water and leave to soak for 5 minutes. Then drain.

    Serve the noodles with the meatballs and sauce on top. Optional: Top with a bit of cilantro and a wedge of lemon if you have any. And enjoy!
