  • Step 1
    Peel the potato and carrots and dice them.
  • Step 2
    In a hot pan, add a bit of olive oil, curry paste and cook for a few seconds.
  • Step 3
    Add the coconut and mix.
  • Step 4
    Next, add some soy sauce (Optional: lime zest), chicken stock cube and half a cup of water per person.
  • Step 5
    Add the potatoes, carrots and the beef. Mix.
  • Step 6
    Mix well, cover and cook for 20 minutes on a low heat until the vegetables are tender.
