Beef (ground-beef patties fresh)

Carrots (fresh)

100 g
Potato

1 tsp
Curry paste (green)

100 ml
Coconut milk

1 tbsp
Soy sauce

1/4
Chicken bouillon (cube)

- Step 1
Peel & small dice the potatoes. - Step 2
Peel & small dice the carrots. - Step 3
Heat a drizzle of olive oil in a pot, over medium heat. Add the curry paste & sauté for 30 sec, stirring. - Step 4
Dissolve the stock cube in 100 ml of warm water per serving & add it to the pot with the curry paste. Add the soy sauce & some lime zest, if you have some. - Step 5
Add the diced potatoes & carrots. Stir & leave to cook for 4-5 minutes, over medium heat. - Step 6
Add the minced beef & stir with a wooden spoon to break down the pieces. Cover & leave to simmer for 15-20 min, over low heat. - Step 7
Once cooked through, add the coconut milk & stir for 1-2 min. - Step 8
Serve the Thai beef curry in a bowl. Re-season to taste & enjoy !
