- Step 1
Peel the potato and carrots and dice them. - Step 2
In a hot pan, add a bit of olive oil, curry paste and cook for a few seconds. - Step 3
Add the coconut and mix. - Step 4
Next, add some soy sauce (Optional: lime zest), chicken stock cube and half a cup of water per person. - Step 5
Add the potatoes, carrots and the beef. Mix. - Step 6
Mix well, cover and cook for 20 minutes on a low heat until the vegetables are tender. - Step 7
