Flank steak

White rice (long grain)

Yellow onion
1 tbsp
Soy sauce
1 cm
Ginger (fresh)

Lime
1 handful
Arugula

In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice & keep warm. - Step 2
Meanwhile, peel & mince the onions. - Step 3
Slice the beef into thin strips. - Step 4
Prepare the marinade. In a bowl, combine : the soy sauce, ginger, lime juice & minced onions. Add the sliced beef & stir to evenly coat. Leave to marinate for 5 min. - Step 5
Heat a drizzle of olive oil in a pan, over high heat. Add the beef & its marinade. Sauté for 2-3 min, until the sauce has reduced. - Step 6
Serve the marinated beef on a bed of fluffy rice. Top with minced chives, if you have some & arugula. Re-season to taste & enjoy !
