Boil hot water. In a bowl, mix the couscous with salt, pepper, and a drizzle of olive oil. Pour the same volume of couscous in water over the top. Cover and let it swell for 5 minutes, then fluff with a fork. - Step 2
Meanwhile, wash and cut the cucumbers into small cubes. - Step 3
Wash and cut the tomatoes into small cubes. - Step 4
Peel and finely slice the onions. - Step 5
Finely chop the mint. - Step 6
Finely chop the parsley. - Step 7
Prepare the tabbouleh. In a bowl, combine the couscous, cucumbers, tomatoes, onions, parsley, and mint. Season with a drizzle of olive oil. Season with salt and pepper, and add the lemon juice. Refrigerate. - Step 8
Heat a drizzle of olive oil in a skillet over medium heat. Add the chicken. Season with salt and pepper, and cook for 4 to 5 minutes on each side, until cooked through and golden brown. - Step 9
Serve the chicken on a plate with the homemade tabbouleh. Season to taste and it's ready!
