    Boil hot water. In a bowl, mix the couscous with salt, pepper, and a drizzle of olive oil. Pour the same volume of couscous in water over the top. Cover and let it swell for 5 minutes, then fluff with a fork.

    Meanwhile, wash and cut the cucumbers into small cubes.

    Wash and cut the tomatoes into small cubes.

    Peel and finely slice the onions.

    Finely chop the mint.

    Finely chop the parsley.

    Prepare the tabbouleh. In a bowl, combine the couscous, cucumbers, tomatoes, onions, parsley, and mint. Season with a drizzle of olive oil. Season with salt and pepper, and add the lemon juice. Refrigerate.

    Heat a drizzle of olive oil in a skillet over medium heat. Add the chicken. Season with salt and pepper, and cook for 4 to 5 minutes on each side, until cooked through and golden brown.

    Serve the chicken on a plate with the homemade tabbouleh. Season to taste and it's ready!
