  • Step 1
    Prepare the marinade. In a bowl, combine : yogurt, tandoori spices, grated garlic, lemon zest & juice & a good drizzle of olive oil. Season with salt & pepper.
  • Step 2
    Slice the chicken into cubes & combine with the marinade to coat well. Set aside.
  • Step 3
    Meanwhile, in a pot of salted boilling water, cook the rice according to package instructions. Once cooked through, drain the rice.
  • Step 4
    Heat a drizzle of olive oil in a pan, over medium heat. Add the marinated chicken & cook for 8-10 min, stirring occasionally.
  • Step 5
    Serve the tandoori chicken on a bed of fluffy rice. Top with fresh coriander, if you have some & enjoy !
