recipe

  • Step 1
Preheat the oven to 190°C. Peel & dice the potatoes.
  • Step 2
Wash & slice the Brussels sprouts in half.
  • Step 3
On a sheet tray lined with parchment paper, add the Brussels sprouts. Drizzle with olive oil & toss to coat. Season with salt, pepper & the balsamic vinegar. Toss & roast for 20-25 min at 190 °C.
  • Step 4
Meanwhile, in a pot of salted boiling water, add the potatoes & cook for 15 min, over medium heat.
  • Step 5
Once the potatoes are soft, drain them. Using a potato masher or a fork, mash the potatoes in the pot until softened. Stir in the butter (optional), milk, salt & pepper. Mash again until smooth. Set aside & keep warm while you sear the steak.
  • Step 6
Heat a drizzle of olive oil in a pan, over high heat. Add the steak & cook for 2-3 min on each side, for rare doneness. Season with salt & pepper.
  • Step 7
Once golden & crisp, remove the Brussels sprouts from the oven. Serve them alongside the mashed potatoes & the sliced seared steak. Re-season to taste & enjoy !
