- Step 1
Wash the peppers, cut in half and remove the seeds, and cut them into thin strips. - Step 2
In a pan on high heat, add a drizzle of olive oil, the chopped onions and pepper strips. Cook for 2 minutes, stirring frequently. - Step 3
Add the chopped tomatoes, chopped garlic, and 2 tablespoons of water per person. Stir and then cover for 10 minutes on low heat. - Step 4
Remove the vegetables from the heat, cover and keep warm until ready to serve. - Step 5
In a pan, add a drizzle of olive oil and the steak. Cook for 2 minutes on each side (or longer depending on how you like your meat cooked). - Step 6
Once the meat is cooked, remove it from the pan and wrap it in aluminum foil. - Step 7
Cook the polenta according to package instruction. - Step 8
Incorporate the cheddar. If it's too thick, add some more milk. - Step 9
Slice the beef in thin strips. - Step 10
Serve the polenta, topped with the beef and vegetables. Optional: Add some basil or chives. Season with salt & pepper. Dinner is served!
