  • Step 1
    Wash and peel the potato, cutting them into rounds (around 1 cm thick).
  • Step 2
    Add them to a pot of boiling salted water. Cook for 10 minutes.
  • Step 3
    Take a separate pot and boil the eggs for 7 minutes.
  • Step 4
    Meanwhile, chop the shallots.
  • Step 5
    Make a dressing by mixing: mustard, vinegar, shallots, 1 tablespoon of olive oil per person, salt, pepper.
  • Step 6
    When the potatoes have been cooking for 10 minutes, add the green beans to the pot (trimming them beforehand if you prefer). Cook for 10 minutes.

    Once cooked, place them in a pot of cold water to stop them cooking further.
  • Step 8
    Do the same with the eggs, then peel them.

    In a salad bowl, add the potato, strained beans, chopped parsley, dressing and mix. Add the halved eggs, anchoivies (without oil), season.
