- Step 1
Wash and peel the potato, cutting them into rounds (around 1 cm thick). - Step 2
Add them to a pot of boiling salted water. Cook for 10 minutes. - Step 3
Take a separate pot and boil the eggs for 7 minutes. - Step 4
Meanwhile, chop the shallots. - Step 5
Make a dressing by mixing: mustard, vinegar, shallots, 1 tablespoon of olive oil per person, salt, pepper. - Step 6
When the potatoes have been cooking for 10 minutes, add the green beans to the pot (trimming them beforehand if you prefer). Cook for 10 minutes. - Step 7
Once cooked, place them in a pot of cold water to stop them cooking further. - Step 8
Do the same with the eggs, then peel them. - Step 9

In a salad bowl, add the potato, strained beans, chopped parsley, dressing and mix. Add the halved eggs, anchoivies (without oil), season.
