- Step 1
Preheat the oven to 180°C. Defrost the spinach according to the package instructions. Drain well & set aside. - Step 2
Roll out the pie crust into a pie dish (we used a 25 cm diameter dish here). Poke the bottom of the crust with a fork & bake for 5 min at 180°C. - Step 3
Meanwhile, slice the goat's cheese into rounds. - Step 4
Prepare the quiche batter. In a large bowl, add : the eggs & the crème fraîche. Season with salt & pepper & whisk vigorously. - Step 5
Add the spinach & crumbled remaining goat cheese. Mix gently. - Step 6
Once the pie crust is parbaked, take it out of the oven. - Step 7
Pour the quiche batter over the pie crust and add the goat cheese rounds on top*. Bake for 40-45 minutes at 180°C. *Check out our tips for this step. - Step 8
Once cooked through, take the quiche out of the oven. Serve the spinach & goat cheese quiche on a plate with a side of green salad dressed to taste. Enjoy!

For a truly flavoursome dish, we suggest spreading mustard on the pie dough & adding smoked salmon, bacon or sun-dried tomatoes to the quiche filling.
