  • Step 1
    Remove the outer skin of the onion and finely dice.
  • Step 2
    Heat a drizzle of olive oil in a pan on medium heat. Add the onion and grated garlic and cook for 1 minute.
  • Step 3
    Add the harissa, tomatoes, and beans (rinsed and drained).
  • Step 4
    Cover with water (1/2 cup per person).
  • Step 5
    Season with salt & pepper, bring to a boil, cover and let it cook on medium heat for 10 minutes.
  • Step 6
    Optional: Add baby spinach and add 3 minutes to the cooking time.
  • Step 7
    Serve and enjoy!
