Spicy Tomato & Bean Soup

Tomatoes (canned, peeled)

Yellow onion
100 g
Cannellini beans (cooked)
1/4 tsp
Harissa (paste)
1/4 clove
Garlic

Spinach (fresh)

- Step 1
Remove the outer skin of the onion and finely dice. - Step 2
Heat a drizzle of olive oil in a pan on medium heat. Add the onion and grated garlic and cook for 1 minute. - Step 3
Add the harissa, tomatoes, and beans (rinsed and drained). - Step 4
Cover with water (1/2 cup per person). - Step 5
Season with salt & pepper, bring to a boil, cover and let it cook on medium heat for 10 minutes. - Step 6
Optional: Add baby spinach and add 3 minutes to the cooking time. - Step 7
