  • Step 1
    Preheat the oven to 220°C. On a baking tray, add the strained chickpeas & half of the dried thyme. Season with salt, pepper & a drizzle of olive oil. Roast in the oven for 10-12 mins, stirring halfway through.
  • Step 2
    Peel and finely mince the onions & garlic.
  • Step 3
    Add a drizzle of olive oil in a pot. Sautée the onions & garlic for 2 mins, on a medium heat.
  • Step 4
    Add the cumin, remaining thyme & a pinch of paprika per person (optional). Cook for another min.
  • Step 5
    Add the tomatoes, half a teaspoon of honey per person (optional) & the harissa. Season and leave to cook for 5 minutes, on a low heat, until simmering.
  • Step 6
    Add the coconut milk and blend the soup to obtain a smooth texture.
  • Step 7
    Remove the chickpeas from the oven & serve the as a topping for the soup. Season to taste. Optional : if you wish, add some crumbled fresh goat's cheese & fresh herbs on top of your soup & enjoy !
