Ingredients for 1

300 g
Crushed tomatoes

1/4
Yellow onion

1/4 clove
Garlic

20 ml
Coconut milk

Cilantro (fresh)

Thyme (dried)

Chickpeas (canned)

Cumin (ground)

Paprika

- Step 1
Preheat the oven to 220°C. On a baking tray, add the strained chickpeas & half of the dried thyme. Season with salt, pepper & a drizzle of olive oil. Roast in the oven for 10-12 mins, stirring halfway through. - Step 2
Peel and finely mince the onions & garlic. - Step 3
Add a drizzle of olive oil in a pot. Sautée the onions & garlic for 2 mins, on a medium heat. - Step 4
Add the cumin, remaining thyme & a pinch of paprika per person (optional). Cook for another min. - Step 5
Add the tomatoes, half a teaspoon of honey per person (optional) & the harissa. Season and leave to cook for 7-8 mins, on a low heat, until simmering. - Step 6
Add the coconut milk and blend the soup to obtain a smooth texture. - Step 7
Remove the chickpeas from the oven & serve the as a topping for the soup. Season to taste. Optional : if you wish, add some crumbled fresh goat's cheese & fresh herbs on top of your soup & enjoy !
