Speedy Chicken Stew with Rice

White mushrooms (whole)

White rice (long grain)

- Step 1
Peel & slice the carrots into thin rounds. - Step 2
Slice the ends of the leeks.* Slice them into thin rounds & place them in a colander. Rinse thoroughly, to remove all impurities. *Check out our tips for this step - Step 3
Clean & thinly slice the mushrooms. - Step 4
Cut the chicken into cubes. - Step 5
Heat a drizzle of olive oil in a pot, over medium heat. Add the leeks, carrots & mushroom. Sauté for 3-4 min, stirring. - Step 6
Add the chicken & cook for another 2-3 min. - Step 7
Add the cream, between 80-100ml of water per serving & the veal stock. Season with salt & pepper & stir to combine. cover & leave to simmer for 15-20 min. - Step 8
Meanwhile, in a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice. - Step 9
Once the chicken stew is ready, serve it on a bed of fluffy rice. Re-season to taste & enjoy !
