Zucchini

Beef (top round steak)
1 tbsp
Red wine vinegar
1/2 tsp
Oregano (dried)

- Step 1
Wash the zucchini and cut them into 1/2 inch cubes. - Step 2
Mix the vinegar, 2 tablespoons of olive oil (per person), salt & pepper, and oregano in a medium sized bowl. - Step 3
Add the zucchini and mix to coat. Set aside. - Step 4
In a pan on high heat, add a drizzle of olive oil and the steak. Cook for 2 minutes on each side (add more cooking time depending on how you like your meat cooked). - Step 5
Once the meet is cooked, transfer to a cutting board and let it rest for 5 minutes (letting it rest helps the meat become more tender!) - Step 6
Cut the steak into slices. - Step 7
On a plate, add the steak, the zucchini with the remaining sauce, a sprinkle of oregano, salt & pepper and enjoy!
